Raspberry Truffles - Yum! Yum!
Do you like to bring treats to work to share with your co-workers? The recipe below (Raspberry Truffles) is so simple to make, and it makes a lot of truffles to share! This is the perfect recipe for sharing. Bring them to the next PTA meeting, maybe as a thank-you to a dinner party. You’ll be amazed at how simple this is, and it’s something you can come back to and make in a pinch.
Are you ready to make Raspberry Truffles?
Ingredients You’ll Need:
20 squares semi sweet baking chocolate, divided
1 (8 oz) pkg. cream cheese, room temperature
2 t raspberry extract
Colored sprinkles (optional)
*Next time try using orange, almond or peppermint extract for a new twist on the recipe!
Let’s get started:
First you’re going to take 8 squares from your 20 semi sweet baking chocolate squares and melt them. I like to do it in the microwave, since it’s quicker.
Using a medium bowl, beat your cream cheese until it’s creamy and nice and smooth. I use an electric mixer set on a medium setting.
Now simply pour your melted chocolate, along with your raspberry extract into your smooth and creamy cream cheese. Combine the ingredients, mixing until they are thoroughly combined.
Take your mixture and put it in the fridge to cool for about 1 hour. The mixture will become firm, which makes it easier to work with.
On a cookie sheet, place waxed paper. You’ll now take your firmed up mixture and create small balls.
Now you’re going to melt the rest of your chocolate, 12 squares. Once the chocolate is melted, you’ll dip each small ball into the melted chocolate. Place them back onto the cookie sheet in a single
layer.
Optional: After dipping them in the chocolate, sprinkle them lightly with colored sprinkles.
You’ll want to put the Raspberry Truffles in the fridge for 2 hours so the candy can firm up.
This little recipe can make up to 36 truffles, which means there’s plenty to go around!
