Caramel Yummies

Today, we’re going to make a fun little nougat treat that combines caramel and nuts. These are chewy and yummy, which is why they’re called Caramel Yummies! You’ll recognize these if you were on my mailing list. I’ve decided to stop the mailing list and include all these great treats here so everyone can enjoy them!

Ingredients you’ll need:

1 (14 oz) pkg. caramels
2 cups of nuts (you can use: peanuts, cashews, pecans) - I prefer
peanuts or cashews pieces
2 T water
2 T butter
4 oz. white candy coating
4 oz. semisweet chocolate candy coating

Let’s get started:

In a microwave safe bowl, combine the caramels, butter and water. You’re going to microwave this mixture for 1 minute. Remove it from the microwave and stir it, and continue this pattern until the mixture is smooth. Heat 1 minute, stir, reheat. Because each person’s microwave is a little difference, I can’t give you an
exact time this will take.

Once your mixture is ready, you’re going to fold the nuts (of your choosing) into the mixture.

*Tip - try dried fruit in place of nuts for a new twist next time (dried cherries, or raisins are delicious)

Next you’re going to get a baking sheet or pan (must fit in freezer) and place waxed paper over it. With a spoon, drop round mounds onto the waxed paper.

Freeze the Caramel Yummies for 15 minutes.

Lastly, you’re going to combine the candy coating into a bowl that is microwave safe, and microwave this mixture at 20 second intervals. Just like the mixture above, take it out and stir it, and reheat it until smooth.

Now that your mixture is ready, and your Caramel Yummies have been in the freezer for 15 minutes, you’ll take each piece and dip it in the candy coating mixture! Lastly, you’ll place your Caramel Yummies into the fridge so they can finish setting. That’s it; easy-peasy!
