Butterscotch Crunchies

Today we’re going to make Butterscotch Crunchies. A super-duper easy to make recipe.

I’m trying to include a range of different treats you may not have made before. It’s fun to make your old standby treat, but making something new is a great way to find a new favorite your family will love. They’ll love the variety, and everyone will pick their own favorite sweet treat!

Are you ready to get started?

What You Need:

2 (6 oz.) pkg. butterscotch pieces
1 cup of Spanish peanuts
1 1/2 cup of chow mien noodles (what?!! Yup, you read that right!)

*You’ll want to use a double boiler for this. You can mimic this by placing a stainless steel bowl over the top of a medium pan if you don’t have a double boiler.

Let’s get cooking:

You’re going to place water in the bottom pan, and bring it to a boil. In the top section, you’ll place your butterscotch pieces. You’ll need to stir it constantly, and don’t leave it here too long. It will take about 3 minutes until smooth, so watch it closely!

Next you’re going to take your Spanish peanuts and your chow mien noodles and stir them into your butterscotch mixture. You want to completely cover them in the butterscotch.

Now that you’ve combined the ingredients well, you’re going to drop spoonfuls of this mixture onto a baking sheet prepared with wax paper.

Lastly, you’ll want to pop them into the fridge for 2 hours so they can firm up.

This will make close to 3 dozen Butterscotch Crunchies. You can half the recipe to make a smaller batch.

*Tip- You can alternate the butterscotch with caramel or chocolate! Not everyone loves Butterscotch, so choose your flavor based on your own family favorites!
